Turkey & White Bean Chili!

It's been quite cold in Orlando the past couple of months with the highs in the 50's and the lows in the 30's. I know a lot of northerners would probably be out wearing shorts in weather like that but for a Florida girl, that's cold! When it gets cold out, I tend to crave a nice big pot of something hot. Maybe a stew or a chili or a soup. My only problem is that David doesn't like stew, is definitely not a fan of soup and doesn't eat tomatoes so chili is out. Well, was out until I found this recipe for white bean chili. I made this yesterday in the afternoon and let it sit on the stove on a low simmer until we were ready to eat hours later. It came out really yummy and was super easy to make. It also definitely took away the chill! The picture is from my phone so sorry for the crappy quality. Hopefully the camera will be fixed soon! I got the recipe from Rachel Ray's first 30 minute meal book and the recipe is after the jump!

1 Tblsp Olive Oil
1.5 pounds ground turkey breast
1 large yellow spanish onion chopped
1 jalapeno pepper minced
2 cloves garlic minced
2 tblsp ground cumin
A few shakes of tobasco
2 tblsp chili powder (this isnt in the recipe - I added it so it's up to you if you would like it in)
Handful of fresh cilantro chopped
28 ounces chicken stock
1 can great northern white beans
coarse salt

we topped out chili with shredded cheese and sour cream and ate it with tostitos!

Heat oil in deep skillet or pot over medium-high heat. Add turkey and cook for a couple of minutes, keeping the ground meat moving. Add onion, minced hot pepper, garlic, seasonings and cilantro. Reduce heat to medium and cook together for five minutesto soften and sweeten onion. Add broth and beans. Add salt to taste. Bring to a boil. Reduce heat and simmer until you are ready to serve.

Ground turkey also healthy!!!!

I make chili sans tomatoes because neither of us are fans of tomatoes. :-)

so you make basic chili with ground beef and kidney beans etc? and what do you use for liquid?

I use ground beef and then chili beans, red beans and kidney beans and use the liquid from the beans. I also add chili seasoning (those lovely packets) and some diced onion when browning the meat and it comes out great.

I grew up watching my mom drain chili beans, adding them to ground beef and then tomato without any seasoning. First time I started to make chili for my ex-husband, he stopped me and showed me his way. I've been making it his way ever since. :-)
